How to make TOM KAH GAI

1. Put 3/4 cup coconut cream together with salt, galangal and chicken into a saucepan and bring to boil over medium heat until chicken is almost cooked.

2. Add lemon grass, kaffir lime leaves and mushroom, bring to boil again until chicken and mushroom are cooked.

3. Add the remaining 1/4 cup coconut cream, stir to blend well.

4. When the soup starts to boil again, turn off and remove from the heat.

5. Add flavours with 2 teaspoons fish sauce, lime juice, 1 teaspoon sugar and chillies.



While cruising the Kerala Backwaters we got to try our hand at fishing. Here I am with my "catch." Haha small... but the really fun thing was learning how to fish with both a pool and a net. The crew of our cruise boat even cooked the fish we caught... it was VERY bonny! haha
